This soup is truly delicious and satisfying. It has a total of 5 veggies and paired with the cold pressed olive oil it won’t leave you hungry. My kids loved it and I loved that they were eating their greens. Truly a nourishing and gut healthy meal.

2 medium- to large courgette’s

2 medium red onions, chopped roughly

2 cups of baby spinach

3 medium potatoes

2 cloves of fresh garlic, coarsely chopped

½ teasopoon of dried origanum

1 cube of Kallo mushroom stock

1 tablespoon of ghee or butter

1 heaped teaspoon of chicken stock powder or vegetable stock powder

1 liter of filtered water

1 heaped teaspoon of course sea salt

Juice of 1 small lemon

**Garnish with: Generous drizzles of cold pressed olive oil, finely grated pecorino cheese & freshly ground black pepper to taste

Instructions:

Heat a deep soup pot and add the ghee/ butter onions, potatoes, garlic and courgette’s – and sauté for at least 5 minutes.

Then season with the salt and add all the other ingredients apart from the spinach & broccoli and allow to simmer on medium heat for 20 minutes.

16th November 2016

Recently my friend Diaan arrived at my door eith a huge bag full if greens from her organic garden. For me, this the equivalent of a pair of  a pair of Jimmy Choo’s for a shoe addict. I used this fabulous gift to create a Superfood sauce, or pesto if you like, here goes:

  • 3 kale leaves
  • 4 spinach leaves
  • handful of chives
  • handful of flat leaf parsley
  • Hand ful of raw cashews
  • the juice of one lemon
  • 1 clove of garlic
  • 100ml of cold pressed olive oil
  • Pink salt to taste

Simply whizz all the above together in your food processor and serve with well cooked quinoa and a lovely little avocado.

There really is nothing to this quick lunch, and it’s nourishing, simple and delicious. you can also drizzle it over a hearty vegetable or tomato soup, or spread it on a few rice cakes, or some sourdough toast with fresh tomato and mashed avo…I can keep going…but I eon’t.

Salad

lovely little vegan detox salad gluten free, vegan, protein rich, good fats, vitamin & mineral packed

3rd March 2015

I don’t want to blow my own trumpet….but this is a really amazing and lovely little detoxing vegan and gluten/ grain free salad. Full of protein, vitamins, minerals and fiber….it really ticks all the boxes. Have it for lunch with a couple of baked sweet potatoes on the side.

Ingredients:

  • Two cups of organic spinach, shredded
  • 1 cup of organic carrots, shredded
  • 1/2 cup of raw cashew nuts
  • 1/cup of hulled sesame seeds
  • 3 table spoons of cold pressed olive oil
  • Pinch of garlic salt

Combine the spinach and carrot roughly in your salad bowl.

Then pulse/whizz the nuts and seeds in your food processor until the cashews are cumbly.  Next stir the olive oil and garlic salt into the nut mixture and “dress” the salad. It really is as simple as that :-), but so yummy and healthy.
